PA Dutch Chicken Corn Soup

February is a Great Month to SERVE SOUP!

PA Dutch Chicken Corn Soup
1 3-4 lb. chicken  (cook in BEAN POT)
1 onion chopped 
1 rib celery w/ leaves, chopped 
4 qts. water or broth
2 cups or more fresh corn off cob or 1 10 oz. package frozen corn 
2 hard boiled eggs 
salt and pepper 
dumplings:  1 cup flour  1 egg 
milk to make a soft dough to roll out
 cut small dumplings 1/2 inch or so in size (not large dumplings)
Cook chicken in Bean pot @ 350 degrees approximately 2 hours. When done remove chicken leave drippings. Cool and take meat from skin and bones. Add onion, celery, s&p, water /broth, and chicken to bean pot. . Add corn to pot and simmer. Place back in oven for an hour . Add in dumplings, return to oven to simmer until done. (I usually cook about 15 minutes with lid on, 10 minutes with lid off. Add chopped eggs. Serve hot garnished with parsley if desired.

Spinach Pull Apart Bread

Spinach Pull apart Bread (great for SUPER BOWL GAME DAY!)

Ingredients
3 tblsp butter melted
1 ½ tsp Garlic Salt
8 oz cream cheese softened
¼ cup mayonnaise
¼ cup parmesan cheese
½ cup shredded mozzarella cheese
1 9 oz box frozen chopped spinach thawed, squeezed to drain then finely chopped
½ tsp basil (optional)
¼ tsp black pepper
2 8 oz cans  rolls of Garlic crescent rolls

1 cup of marinara sauce (heated if desired)
directions

Heat oven to 350 degrees F. Using Celebrating home Bundt pan,. In small bowl mix butter and 1/2 teaspoon of the garlic salt; set aside.

In medium bowl, mix cream cheese mayonnaise, Parmesan cheese, mozzarella cheese, spinach, basil, pepper and remaining 1 teaspoon garlic salt until blended; set aside.

Unroll crescent dough; separate into 16 triangles. Cut each triangle in half lengthwise to make total of 32 small triangles. Stretch or press 1 triangle slightly, being careful not to tear it. Spoon 1 tablespoon spinach mixture onto center of triangle; pull dough around mixture into a ball. Press edges to seal. Repeat with remaining triangles.

Roll each ball in butter mixture; layer in pan. Bake 35 to 40 minutes or until golden brown. Cool 5 minutes. Place heatproof serving plate upside down over pan; turn plate and pan over. Remove pan. Cool 10 minutes longer. Serve warm with marinara sauce.

Mexican Coffee in a Bean Pot!

CELEBRATING HOME with My BEAN POT!

GREAT DRINK on Cold days, when entertaining guests or for my Superbowl Party!
Ingredients:
3/4 cup coffee dark roast coffee
2 tsp cinnamon
6 cups water 
1 cup milk
1/3 cup chocolate syrup
2 tbsp light brown sugar
1 tsp vanilla extract.

Garnish Whip cream and cinnamon

Place coffee and cinnamon in filter basket  of coffee maker. Brew coffee as normal.

In Bean Pot Blend remaining ingredients except garnish. Stir til blended. 
(For microwave version of this recipe Heat this mixture in microwave for 5 minutes on high. )

Add Brewed Coffee, Stir til blended.  For oven version Bake @ 375 for 1 hour.

Place in serving mugs. Garnish Makes 6 servings . 

(Should be room in your bean pot to double this recipe)

BEAN POT MAC n CHEESE

1,2,3,4 Bean Pot Mac and Cheese

1 stick melted butter
2 cups uncooked macaroni
3 cups shredded cheese
4 cups of milk
Combine all in the Bean Pot. Cover with lid and place in 350 degree oven for about 60-80 minutes.
